I have to admit a bit of confusion when it comes to Force Acrobatics. I get Force Push and Pull, it's using the invisible energy of the Force to seize an object and move it. Force Lightning is a more extreme version, where the invisible power of the Force is used by the Sith in an unnatural way and released in the form of deadly lightning.

But how does the Force enable Jedi or Sith to perform those amazing acrobatics? I would assume that the Force somehow supercharges their muscles, giving their bodies the strength to perform those superhuman feats.

For example, we see Jedi and Sith moving at speeds faster than any normal being can move. The duel between Yoda and Dooku on Geonosis comes to mind, where they're moving at lightning speeds. Are we to assume that the Force is giving their bodies such energy that they can move beyond what is normally possible?

Another question is how they perform those amazing jumps. Humans can only jump so high-(I used to be a gymnast, I know there's a limit)-but what we see Jedi and Sith doing goes far beyond what normal beings can do.

Obi-Wan's amazing leap in TPM comes to mind, where he jumps from the lower levels of the power generator, up two full levels to reach the catwalk where Qui-Gon is duelling Maul. That goes beyond any human's ability to jump. Does the Force grant Jedi so much strength that they can literally defy gravity-at least partially-and make those amazing leaps?

One final thing I noticed is the Jedi's ability to survive great falls. Mace falls from Dooku's balcony and lands on the arena floor with ease. That's a fairly impressive height to fall from, and any normal human that fell from that height would probably have injured themselves somehow. Dooku also makes a aerial flip on the Invisible Hand, and lands on the lower deck without so much as wobbling.

Any thoughts on how the Force helps the Jedi and the Sith to perform these amazing acrobatics?

Force users just concentrate on the Force and use it to enhance their ability to jump. They keep drawing on it as they fight with their Lightsabers, while staying connected they're able to see each attack and by and large, can counter it.

Answer, The Jedi take Force Ballet classes and learn that the energy in everything can make them jump and do dance steps in combat. (Sarcasm). :D XD
