The only reason guy's say they like eyes is because when a girl asks what he likes about her he doesn't want to offend her by saying breasts, so he tries to think quickly and says eyes, because those were what he was using at the time to look at her breasts.

You don't have to go into describing her eyes like the sea after a storm, or something poetic like that. Just complimenting the lady by saying "You have beautiful eyes" while looking SINCERE, btw, is very nice.
