I was convinced after seeing AOTC that we'd see a Windu Vs Dooku battle, so I would go for that.

I would like to see a Luke Vs anyone in the new saga.

Dooku's style of dueling and swordsmanship are measured and stylish. I would like to see him against the more athletic and aggressive style of Maul (with his original legs and a double-bladed lightsaber). Industrial Corouscant for the setting.
