It's explained that Jedi (except Anakin) are taken away from their families (presumably never to return) at a very young age. They are supposed to give up all ties to family, desire for fame, things, etc. If this is the case why do they seem to keep their given names? Why aren't they renamed after being admited to the Jedi order? Also, if they give up all this, how is it Count Dooku is a count? Titles like that are passed generation to generation. He should have been passed over for whoever was next in line...

He took that title after he left the Jedi Order and went back to his homeworld.

    Right.
And how do you know they keep their names? They may very well be assigned new ones.
It's unlikely there's a Kenobi family somewhere missing their son.

All ties are forbidden, and that would logically include changing their names.

Anakin, as you point out, is an exeception.

That's interesting. Cuz some of the Jedi of the same species have similar names:

    Yoda/Yaddle

    Eeth Koth/Agen Kolar

    Adi Gallia/Stass Allie

    Luminara Unduli/Bariss Offee

    Qui-gon/Obi-wan

I think it depended on the circumstance and the childs notabilaty if it needed a name change.

Hmmm, I wonder if Dooku was called Count when he was a youngling. :p Maybe one of the reasons he left the Jedi order was to regain his title ?

I guess he means, depending on how you pronounce them, the last names somewhat rhyme. :D

I think the jedi ask the parents what they would like their son/daughter would be named

    Qui-Gon Jin/Seasee Tiin

They are very much alike, minus the horns.

    Plo Koon/Obi-Wan

Also very much alike. Obi-Wan wasn't old enough to need the mask though.

Oh! I know! I think Bail is a Twilek Jedi

    Bail Organa/Aayla Secura

    Maybe Padme too!

    Padme Naberrie/Shaak Ti

And the cloners! I think this is proof that Mace Windu may have been behind the ordering of them.

    La Masu/Mace windu

And of course......The Clone Template could be of an infamous unknown species.

    Yoda/Boba

Perhaps it's a nickname. Maybe he was always counting things, or good at math, or when he would beat people in saber sparring he would tell them "Ha! You're win #256." and people just associated this Dooku Jedi as being one who counts so they started caling him "Count"

They may have kept their names, they may have not. Who cares if Ben is a Kenobi, or Adi is a Gallia? Their parents were probably out there, faraway from the center, but as a citizen of the Republic, I think they know their responsibility when it comes to having force-sensitive babies, that they will be giving them to their government's guardians of peace and that they willl no longer look for them or make contact with them unless they met them by chance. As for the Jedis in the film, there's no event that they have known their biological parents. There is a situation wherein the guardians of these force-sensitive children doesn't fully approved of giving them to the Jedi, but the way I see it no matter how they disapproved it they will be forced to surrender the child to the Jedi since it is their responsibility as a citizen of the Republic. Look at Vos's situation. As for Dooku, he is really a count even though a Jedi. He just dosn't take it since he is a Jedi. When he resigned from the Order the took he title. Here is his biography:
