Are there rules on what you can and can't in a competition-like battle? Are you allowed to kick out with your legs? Or is that cheating?

Well, it depends on the duel, really.
You see, someone like Obi-Wan, for example, wouldn't kick in a fair sort of duel. Darth Maul will probably kick.
Remember that it also depends on the desperation of the fight. You tend to bend the rules a little when you're a pinch.
Perhaps you should read a little about Bushido, it's the Samurai codes of combat and the Jedi seem to be based on Samurai, so...

Kicking or punching in a fight isn't exactly cheating, but it shows a high level of aggresion and it might indicate that the fighter is either having a hard time against the other person's style, or that he wants to do some sort of trick.
The most honorable way, though, from what I understand is no kicking or punching.

You should check out www.Everything2.com for information on Bushido.

Also remember that a big rule of the Jedi is that they hardly ever attack first! Aggression is bad, remember? ^_^

LunarBlade is right. Don't punch someone when you're in a lightsaber fight. ;)

Or, you could have the lightsaber + punching + kicking be a specific type of dueling, with its own rules, which might include where you are allowed to hit someone (not below the belt? not in the neck?).

So, you could have "straight lightsaber competition" as well as a more advanced "combined techniques competition."

I'd suggest that at the MOST advanced levels, there could be various obstacles in the arena to manuever around and through, and that there might be an aerial component.
Or those small remotes with the blasts that attack both opponents indiscriminately.

Depends on who's competing and for what purpose. I like to think of the Jedi as going beyond blade vs. blade... :)
