    Could it be, that his saber has two crystals in it, one blue, one green?

    One for attack, one for defense?

    And what does this have significance for?

    In AOTC, during the battle, Mundi has a green saber I think, when he gets onboard the Airbus, when the get rescued his saber is suddenly blue. Some have said it is an error by ILM.

    In AOTC, for one shot, Ki-Adi-Mundi has a green saber (a mistake by the guys at ILM)

    Lightsaber colors have no significance, apart from blue, green, purple = good

    red = bad.

    Ki-Adi-Mundi has a blue saber, that is all.

    Actually, they do have a deeper significance, and actually, blue, green, and purple don't always have to mean good, just as red doesn't always have to mean bad (heck, Leia's saber is red).

    In fact, color has tons of significance within the Star Wars Saga, moreso in the Classic Trilogy. ;)

    Anyways, the correct description of what happened to Mundi's lightsaber is that it is indeed a double-crystaled saber.

    However, while crystals do dictate the color of the blade, the being that builds it does not know how it will turn out (in other words, you can't go off to build a saber and say "Hm, I would like a green one. Let me get a green crystal."). It doesn't work like that. If you want a green blade you have to get a crystal and, while your building your lightsaber, "manipulate" it a bit.

    Red-colored blades are usually an exception, considering the Sith actually make their own synthetic crystals and can thereby choose what color they'd like (red being the universal color for Sith blades red can stand for anger, bloodlust, and "evil".

    Multiple-crystaled lightsabers enable the user to alter the amplitude and length of the blade. However, a side effect of having multiple crystals is that blade color can change in proportion as the amplitude and length are changed (Corran Horn's mulitple-crystaled lightsaber is a prime example of this).

    So, while in the "real world" it was an ILM mistake, in the Star Wars Universe, Mundi was simply "tuning" his lightsaber at that moment (to deflect a heavy incoming of fire, perhaps?) and then changed it back when we next see him. :)

    Maybe Ki lost his original blue saber during the battle, then picked up a green one from a dead Jedi. He then lost that green one, then grabbed another blue one.

    Or maybe he had a multiple-faceted crystal lightsaber and changed the blade length and amplitude- which changes the color- and then changed back. :)

    True...

    ...but it's a logical explanation.

    So is Bib's, considering how many lightsabers had to have been laying around because of all of the slain Jedi. :)
