OK I just increased my awesome cooking skills one level.

    I tend to make stuff from scratch. I grew up a latchkey kid and learned to experiment. Needless to say, I just surpassed my own expectations. I took catfish, dipped it in egg and used granola with almonds and breaded the catfish fillet. After frying it in olive oil, I mixed up some cherries and mascapone and added it to the the finished product. Then on the side was garlic naan bread I bought. Dessert is a greek yogurt base with mashed sweet potatoes cooked in butter and sweetened with honey and finished off with granny smith apples fried in the the sweet potatoes.

    I love when a plan comes together.

    oh and I thought of all this while in the supermarket. No recipes whatsoever. Just looked around and figured what would work.


    oh and years of experimenting with cooking has taught me you can use too much garlic and salt. Tossed alot of meals as a kid because of it.

    The granola when its crushed up alot works best. Its not a very harsh taste. Its just a slight taste and adds flavor to the catfish. The garlic naan bread is the antithesis of the sweet tasting fish.

    I bought the granola in bulk. So instead of clusters it was nearly crushed up so it was no different then breadcrumbs or crushed graham crackers.

    It's the ability to improvise that's key to real cooking. Just the other day I was making Frito chili pie when I ran out of Fritos. Then I says to myself - you know, I says, Cap'n Crunch is about the same color as Fritos.

    funny you should mention capn crunch, I thought the same thing about using it for a breakfast dish. Perhaps taking breakfast sausage and using the meat and covering the the meat with egg and crushed capn crunch.

    I had an idea for a dessert made entirely of other desserts. Take a baking dish and layer it with Twinkies. Then fill the dish with vanilla pudding. Top with chunks of crushed heath bars and Cool Whip. Then chill for several hours. I call it Trailer Tiramisu.

    I may have missed something here, but is beezel telling us he served cherries & mascarpone (a passable if rather simple dessert) *with* the catfish? And a garlic naan on the side? Ye gods :confused:

    Apparently so. I was confused. Especially since apparently sweet potatoes were served for dessert.

    Yeah, I was pretty nonplussed by that, too. Then I totally lost focus and became concerned about greek yoghurt following mascarpone in the same meal... pretty much like worrying about having lost your train ticket after the train has crashed and left you with mangled legs, a ruptured spleen and third degree facial burns.
