Who would have been a dem and a Republican in real life? Who is left wing, right-wing, centrist, etc.

Bail would have been a Conservative, Obi-Wan a Centrist, Anakin a Republican, Palpatine a Democrat and Padme a Conservative. Ahsoka would also be a Conservative.

Palpatine is essentially far right, conspiring to create a dictatorship where he has absolute authority and wiping out anyone who opposes him, disbanding the Senate, keeping planets loyal to the Empire through fear. Back in his days as a senator maybe he could pass as a fairly right wing Republican. Obi-Wan I would say is center-right, he is generally conventional and conservative in his thinking and has respect for authority and institutions such as the Jedi Council. Bail I would probably place between the center and center-right. Anakin probably starts off essentially alt-right, with Palps pushing him towards the far right. Padme comes across as mainstream Republican, again conventional and content with the status quo. Probably goes for Leia too, she would likely have been content with the pre-Empire settlement. Qui-Gon I think was fairly left wing, looked a little like a hippy, repeatedly defied the Council to do what he felt was right. Solo and Chewie could probably be called libertarians.

Where do you think Palpatine's public image as a Chancellor was at the political spectrum?

I'd say Bail, Padmé, Anakin and Obi-wan are all center-left. Palpatine is center-right publicly, but really just believes in amassing power for its own sake. Ultimately, their conflict isn't about ideological leanings, it's about one guy (later two) amassing dictatorial powers.

Yes I'd agree with around the center right for Palpatine's public image. Making the change you can make like electing a new chancellor but then accpeting the reality of Federation control "for the time being" sounds very much a moderately conservative policy, do something (and it doesn't hurt if you gain by that something) but make sure you don't come across as too radical.
