I know why they shortened the Mirror of Galadriel scene:

Seriously now, one of my favorite quotes in both the movie and the FotR volume is Gandalf's: Deserve death? I dare say he does. Many who live deserve death. And some who die deserve life. Can you give it to them, Frodo? Then don't be so quick in judging, for not even the wisest can see all ends.

I'm taking it from the top of my head, so it may not be word-by-word correct, but that's the idea.
