Ok, there is Sev'rance Tann and Lord Trivas but I can't recall any Force sensitive chiss making their way to comics or novels. From what I remember the Chiss knew little about the Jedi pre ABY. It has to be one of the few species that don't have at least a few Jedi kicking around. Was this just because writers, specifically Zahn wanted at least one humanoid species that wasn't steeped in Jedi/Sith folklore and ability?
Well, the main reason is probably just because the Chiss Ascendancy only recently made contact with the Republic when Palpatine was Chancellor, and, even then, didn't become publicly known about until the New Republic. Prior to that there was the Chiss colony on Thule, so there's a good chance there might have been some Sith Chiss at some point in history (frankly, I've always felt that would have been a far better backstory for Sev'rance Tann, but oh well); it's probably just we haven't seen them, same as countless other species really. Even with Thule, Chiss remain fairly rare, even if the books like including them, so the ratio of Force-sensitive Chiss in the Republic/Empire to Force-sensitive [everything else] is still likely to be low.

It's not like Jedi were venturing out that far to find Force sensitive Chiss. Heck, none even knew basic in this era. And wouldn't the Ascendancy really really resent losing any of their children to the far off Republic?
Maybe because they don't need to? Han gets along fine without using the force. Seriously: There are probably force sensitive Chiss out there, but nobody tests them. Also, with the society being organized into houses it is even harder to detect. If your force ability develops with the interests of the house, it is probably called good learning, if you're more sensible for something your house doesn't do it won't be discovered easily.
Force sensitivity is probably pretty rare in the Chiss and there aren't many around to spot the ones that are.
Personally, I'm more interested in whether or not Chiss and humans are genetically compatible. I'd like to see what a human/Chiss hybrid would look like.
Chiss seem more intellectual and logical. Useing the Force is more intuitive. It seems out of character to me for a Chiss to be a Jedi.
I think its more that the Chiss are extremely rare outside of the "Unknown" Regions, so we naturally don't see many as Force-users, either.
I may be misremembering, but I don't recall anything ever stating that Chiss can't be force-sensitive (this is not even taking into account the examples of force-sensitive chiss already in the EU). There may be no mention of how the chiss deal with force-sensitives born among them, but don't mistake that for meaning it doesn't happen, or that they don't receive some kind of training. That kind of story just hasn't been written yet (and should probably remain that way). This. The Chiss are basically the munchkin equivalent of Drow.
