Nougat (US: /'nu?g?t/ nu-g?t, UK: /'nu?g??/ nu-gah)[citation needed] is a variety of similar traditional confectioneries made with sugar and/or honey, roasted nuts (almonds, walnuts, pistachios, hazelnuts and recently macadamia nuts are common), and sometimes chopped candied fruit. The consistency of nougat can range from soft and chewy to hard and crunchy depending on its composition, and it is used in a variety of candy bars and chocolates. The word nougat comes from Occitan pan nogat (Occitan pronunciation: [panu'?at]), from nux gatum, which means nutbread. There are three basic kinds of nougat: The first, and most common, is white nougat (which appeared in Cremona, Italy in the early 15th century and later in Montélimar, France, in the 18th century) which is made with beaten egg whites and honey. In a Mars bar, you have chocolate, caramel and a chewy sponge like substance. That substance is nougat! Although, I've just looked it up and it seems that the Mars bars you have are different to ours.... It's still nougat!
It's a confection that's chewy and spongy and tastes good? Usually made out of honey, sometimes with egg, usually contains nuts. Sometimes a misnomer for chocolate praline?

well if you take the first part of the word, "nou", that is clearly a variation on the word "new". now, if you look closely at the second part of the word, "gat", one can see that it is derived from the french word "gateau" which means "cake". so what we're dealing with here is a new kind of cake injected right into your candy bar. you're welcome and i will not be here all night.

I eat a Payday bar practically daily while I'm working. They boast of peanuts surrounding caramel. They are apparently ashamed of the nougat at its core.
