He wasn't saying "I'm curious". He was saying "That's curious". Just like, as someone mentioned before, you might say "Interesting".

    cu·ri·ous - adj.
    1. Eager to learn more: curious investigators; a trapdoor that made me curious.
    2. Unduly inquisitive; prying.
    3. Arousing interest because of novelty or strangeness: a curious fact.

    Perhaps he should have said:

"I find your statement most curious, but I believe you are lying; therefore, I remain skeptical."

    Would that have been better?

People say one word sentences in real life all the time. Ever responded to a statement with "Really?" or "Interesting..."? It has nothing to with the ability with the speaker, it's just shorthand for the ridiculously long sentence said above.

But just saying "Curious" is like just saying "Interest" not "Interesting".

No it's not, curious is an adjective just like interesting. Interest is a noun.

Ok but it makes as much sense when you say it on it's own as a noun does.

deltron_zero is correct. The sentence "Curious." can be correct because the subject/verb combo is understood per the context of the sentence. He is saying "That's curious".

Like if a crakchead walks up to you and you say "Go away." The sentence has no subject but is correct grammatically because the word "You" is understood.

It's technically correct, but doesn't sound that way.

I really don't want to harp on this too much but I honestly think it sounds fine. I could hear Sherlock Holmes saying it as he looks for clues or something.

Jedreck hit the nail on the head.
'Curious' in that contect is used to imply doubt or disbelief in credence to a comment, statement. For example.

Proj: Ugly face wants the data for Q's.

Prog: It was done ages ago.

    Proj: I thought so too..

    Prog: He needs to retire..

Proj: I agree... we should have him executed.

    Prog: Yes.

Proj: None the less he says he did not receive the spreadsheet.

    Prog: Hmmm... curious...

*raises hand* Yeah I think I actually have said this before. I might have just been remarking to myself or someone with me about an obvious situation.

I loved it. One of the best written scenes in the film.

The word Curious has been used many times in film as a sentence. Especially as noted by detectives or people searching for something. Yes by Vulcans many times.
The word leads the audience into the feel of the scene, Obi is searching and trying to uncover a truth. I thought it was perfect. It was also a subtle way to let Jango now that Obi Wan was not swallowing his lies.

Yeah, curious is a word. Not a popular word that Americans use, I take it. It's not uncommon in sentences. I have used it on occasion. It's similar to peculiar, strange, odd, funny, weird, etc.

Hermione Granger says it in The Sorcerer's Stone, when they walk into the room with the flying keys. Guess those scriptwriters don't know how to write either.

The one word sentence "Curious" is very common in Sherlock Holmes and "Bulldog" Drummond stories(Drummond is a british detective in the mold of Holmes). Since the confrontation between Jango and Obi-Wan is very similiar to the way Sherlock Holmes always confronts his enemies-cordial on the surface, but menace lurking underneath-I believe that this sequence was patterned on that kind of moment from a Holmes story. And since this is the "Mystery" portion of the film it is very fitting indeed.

In fact that one word line "Curious" is one of the best delivered lines in any Star Wars film. It is great acting (Lucas allows Ewan to "act" more than anyone else in the movie). McGregor has posture, voice, facial and eye expression and a superb delivery. THAT is fantastic and a great choice of word.

Oh and by the way Uruk-Hai... this is STAR WARS not LOTR and in STAR WARS people use words like "curious" the way characters in LOTR use Tolkien'isms. But I bet you don't complain about that. ;)

"The" is a really interesting word. When you look at it for awhile, you realize that there really no relationship between the individual letters and the pronounciation. T. H. E. Buzzy sound followed by an Uh.

    The.

    The.

    (Try it with me.)

    The.

What the heck does it mean? The.

Good thing GL used the word sparingly. If he went overboard with the use of the word "the" we'd have to start a thread about it, suggesting that it "makes no sense," or perhaps "it takes me out of the movie," since it is "too American of a word," or that it's "too earthy," and that "good science fiction writers try harder to make up words for normal stuff." I'd heard that he was going to replace all of the instances of "and" in the script with the word "&xer8boxx't" but that it didn't go over well with the screening audiences, since it made the film utterly intelligible. Clearly, GL has "lost it."

What in the world doesn't make sense about it? If someone sees something they consider interesting, they may say "Interesting" If ObiWan hears something that he finds curious (in this context meaning peculiar or odd), he said "Curious" What is wrong with that? This is the king of all Nitpicks, lol
