If you haven't seen it already, you must watch Peter Jackson's documentary They Shall Not Grow Old. He took original film footage from the front lines of WW1, colorized it, corrected the frame rate, and added sound, making it as bright and real as anything seen today. Like you said, it makes the people real. I was blown away when I saw it in theaters (twice) and bought the DVD.

For Castle Kaneda, we wanted the feeling of a Japanese castle fortress that had been taken over by the Mongolian invasion and were using it as a temporary base to further their campaign across Tsushima. What was their day to day like? How could we infuse it with their life and show their takeover, not only physical destruction, but culturally as well. I figured they'd hang up their flags, reforge their own weapons and gather around the fire to drink and tell war stories.
