Yeah, and Jacen, Jaina, and Anakin were Luke's Ahsokas. It actually makes sense if you consider this is a galaxy with teenage Senators.

I think Luke was worried about having an Ahsoka at the time. I don't know if he knew how Jedi Knights were trained; he seemed to make things up as he went along. Sometimes it worked, sometimes the Carida system was destroyed.

That said, there's a fanon that Ken is a Jedi now. Some even say he's Kenth Hammner. (I would've changed my name if it were Palpatine too.)
