    AUSTRALIAN BOOMERANG CHILI
Caution: Not for those folks who are cholesterol conscious! ;)

    1/2 lb. package bacon

    2 tbsp vegetable oil

    2 medium onions (coarsely chopped)

    1 stalk celery (coarsely chopped)

1 green bell pepper (cored, seeded, coarsely chopped)

2 lbs. top beef sirloin (cut into 1 inch cubes)

    1 lb. ground beef

    1 lb. ground pork

4 tbsp ground "hot" red chili (I use ground Thai peppers)

3 tbsp ground "mild" red chili

1 tbsp dried oregano (preferably Mexican)

    6 12-oz cans beer (Australian..like Fosters) ;)

    1 tsp ground cumin

    1 14 1/2 oz can whole tomatoes

    3 tsp brown sugar

    1 small can tomato paste

1 Boomerang (optional, but makes the chili authentic)

    black, red, and white pepper

    cajun spice

    garlic salt

    1. Fry bacon in skillet over med. heat. Drain on paper towels and cut into 1/2" dice and put aside. (sip beer)

    2. Heat the oil in a large heavy pot over medium heat. Add onion, celery, and green pepper and cook until onions are translucent. (sip beer)

    3. Combine all the beef and pork with the ground chili, garlic, oregano, and cumin. Add this mixture to the pot. Break up any lumps with fork and cook until meat is browned. (sip beer)

    4. Add 2 cans of beer, tomatoes, tomato paste, and bacon to the pot. Bring to a boil, then lower heat to a simmer (uncovered) for approx. 1 1/2 hrs. Add a sprinkled covering over the mixture of black, red, white pepper, garlic salt, and cajun spice. Wave boomerang over pot 14 times (completely optional.. this adds no flavor, just humor and fun!). Stir for 3 min, taste and adjust seasonings, add more beer if desired, and if any is actually left at this point. (sip more beer)

    5. Simmer for 2 1/2 hours longer. (sipping beer)

    6. Add brown sugar and simmer for 15 more min. (vigorously waving boomerang again over pot while sipping beer) This will serve approx. 8 people (or 2 kangaroos and a koala). ;)

I love spicy foods, i especialy like mexican and cajun foods, i put tony's chaceries on everything i eat!

TG: I'm not really sure what the difference between creole and cajun is even though i was born in louisiana. I think that cajun is more of seafood, and creole is more of the gumbo/rice that sorta thing. but that's just a guess, i could be wildly off.

I think your chili lacks beans, a_g, but it still sounds pretty good. ;)

I'm gonna be having some of that tonight for dinner, as a matter of fact. Sign on later to observe me in a state of spicy agony. ;) Just because I can't eat it doesn't mean I listen! :p

Anybody else have any foods that don't agree with you but you can't help but eat them? I have a strange reaction to onions, but that doesn't stop me from eating a whole bunch of 'em. ;) I mostly like them with Indian, Middle Eastern, or German and Polish food. :)

Most spicy foods don't agree with me either. But I loves me some chili, enchiladas, quesadillas, tamales, and all kinds of cajun food... especially jumbalaya! And you can't have sushi without a healthy dose of wasabi. ;)

Still, it's rough on me. [face_plain]

Thanks for pointing that out. You can tell I don't cook very often, or write down recipes very often. :p

When I cook it, I do add the following:

2 14-oz cans of red kidney beans

Cajun food is robust, country-style food, found along the bayous of Louisiana, a combination of French and Southern cuisines. It was brought to Louisiana from the French who migrated to the state from Nova Scotia, 250 years ago and used the simple foods, right from the land. Think of heavy, one-pot dishes, like Jambalaya or Crawfish Etouffee, served over steaming rice.

Creole food is a distinctive cuisine, created in New Orleans with European and African roots. It is Cajun food's more refined city relative.

you know it's kind of funny for me to see this thread here and now.

just earlier today when i was having my lunch, i almost killed myself eating an immense amount of red chilis with my food. a lesser man might have thrown in the towel and given up at the point where he is in so much pain that he can't even feel his nose but i saw it through

and even now i can feel a heaving burning sensation in my stomach, hence i hate all of you.

I absolutely LOVE HOT food! One of my favourite dishes to cook is my own version of chilli. You can either eat it by itself, or use it in a pasta dish.

    RECIPE
    * Buy about 500g of salami. Roughly chop up the Salami.
    * Buy a small jar of sliced spanish olives.
    * Use 1 onion.
    * Buy 1 jar of spicy pasta sauce.
    * Buy a small jar of jalepenos.
    * Put some olive oil in a pot, just a moderate amount.
    * Turn on the stove, and heat the oil up.
    * Sprinkle a lot of mexican chilli power into about 750g of premium mince beef, and brown in the pot.
    * Cut up the onion and brown in a frying pan.
    * Once the onion is browned, put into the pot containing the meat.
    * Drain jar of olives and jalepeno's, and add to the meat and onion.
    * Add spicy pasta sauce (about 500mls - 750mls).
    * Finally, add in the salami peices, and stir.
    * Simmer for a while, serve, then enjoy!
