From the hangar fight, Obi-wan vs Dooku. Note the use of the presetn ("holds") which implies that Dooku has present knowledge of this - when, in fact, he has disappeared for the majority of the last 10 years. It makes much more sense for him to say "Yoda held you in such high esteem."
To me, it sounds like a subtle hint that Dooku has connections with someone close to Yoda.

Is the line written as it is just due to a mistake, or is it actually foreshadowing of Sidious' identity?

I think that Dooku just assumes that Yoda hasn't changed his opinion over the past ten years.

"To me, it sounds like a subtle hint that Dooku has connections with someone close to Yoda."

Which he does. No doubt Palpatine/Sidious has told Dooku within the last 10 years how Yoda holds Obi Wan "in high esteem".

Clearly we can see from several scenes that Palpatine knows a lot of the jedi and deals with them regularly.

It was probably Qui Gon or Mace since he didn't think he was capable of the assination attempt on Amidala. it wasn't in his character, I think he said.

I think it was just written in present tense because it makes us believe that Obi is a very powerful Jedi. If the line had been 'Yoda held you in such high esteem' it sounds like Obi had been good but has really let himself go since TPM.

    Sometimes a high-estimated Obi is just a high-estimated Obi.

I don't think George has that good of a plan for the movies. That's a little too obscure to call foreshadowing anyways, it needs to be a little more obvious. If it works out, it's a happy coincidence, if anything.

I really liked this line. Not only did it work as effective taunting from Dooku's perspective, but it also continued to hint at the close relationship that Obi-Wan and Yoda share. Kudos to George!

It is never implied at any point that Dooku had no interaction with the Jedi after his departure from the order. For all we know, he and Yoda were on speaking terms until very recently.

It is known that Count Dooku had been in at least nominal communication with Republic leaders prior to the outbreak of hostilities, due to the "desires" of Palpatine to "open negotiations" with him and the Confederacy, but this all went south, obviously, by the time of the film.

Certainly, Kenobi is one of the more prominently-known Jedi Knights in the galaxy by this point in time, and it probably wouldn't have been all that terribly difficult for Dooku to keep tabs on his whereabouts and exploits through the grapevine. He probably has numerous contacts in the Jedi order, and if nothing else, of course, he as much as says to Obi-Wan in the film that Qui-Gon always had praise for him, so this isn't really that much of an assumptive stretch.
