That should work. I was just thinking that they get damaged if we are transporting the entire cockpit in the back of a truck. I was also considering adding some snaps to make the pieces removable...

At this point I'd say that what we are looking for are "accent" tchotchkes and electronics that you might see behind the pilot's head on what we call "the box" or on the sides of the pilot on what we call "the arms" of the cockpit set. Things like cool lights, toggle switches, push-button switches, rotary switches, flux capacitors, a Mr Fusion, etc.

Both cockpits are a neat idea. But... we sorta sprang the storage of an X-wing cockpit on the Bisons. Any big build we engage in is going to need a home between uses. The bigger, like the AT-ST idea or the MF cockpit, the more problematic for between-uses storage.
That's a valid concern. It might be worth talking to the Bisons about it prior to any large build. For anyone who hasn't seen their attic space it is insanely spacious, though I can understand them not wanting to make it just the North Ridge's storage locker.
