I think, on some level, he may see that in some way, but he's ultimately corrupted himself.

As he is kidnapping and fighting other Jedi he'd have to be quite deluded to consider himself a Jedi

Exactly, and please Lucasfilm don’t retcon that Dooku was a Jedi Shadow infiltrating the Sith.

No. Dooku doesn't forget he was a Jedi, as that was a long period of his life. He views the Jedi Order as incompatible with his desires for the galaxy, and he ended up becoming a Sith to fulfill them. Even as a Sith, he's chosen that path as a means to an end.

He’s a Sith Lord, Palpatine says to him:

“Lord Tyranus, you have done well.” (AOTC)

Speaking of Dooku, “You’re no match for him, he is a Sith Lord.”(ROTS)

@Kato Sai Seems like that is others calling him one but not Dooku himself stating that.

In all reality, the death toll from the Clone Wars that includes the Seperatist starving and blocking trade, food , supplies from systems, shows how dark Dooku became. TCW cartoon shows him as a completely fallen and evil Sith while the actor in the real life PT is introduced first as a former Jedi wanting to make a better galaxy. Just imagine if he used his blue saber and wasn't as manipulative or evil, he would've really had audiences guessing his loyalties until his death and maybe beyond had they portrayed him as a righteous Jedi.
In the end Dooku believed he was above and better than any Jedi. A Sith? Maybe but not a Jedi.
