Was the period in which she was taken as a Padawan to Anakin between Attack of the Clones but before Revenge of the Sith?

 

Yes, according to TCW. Between AOTC and ROTS.

 

So a lot happened in between AOTC and ROTS. But as far as the actual trilogy goes Anakin got a new haircut.

 

i actually thought this went well between eps. 2 and 3. anakin when he first appears seems like "battle hardened anakin" who now has this darker shadow hanging over him. i was slightly surprised it wasn't obvious to the jedi... he dresses in black/dark reds, his hair is a mess, his gaze is dark, he's clearly troubled... mace at least was creeped out.

 

When they meet, it is a few months after Anakin was made a Knight.

 

the clone wars went on for three years which is the time between ep 2 and ep 3. it was also the real time between ep 2 in 2002 and ep3 in 2005.

the clone wars series takes place during these three years.
