Gonna have to go with the obvious choice of Luke Skywalker on this one. The guy is pure power, a master swordsman, and the leader of the Jedi Order. Aside from that, Ganner Rhysode probably.

During the Rise, Mace Windu.

During the Rebellion, I'd like to find Obi-Wan before that stunted slime Skywalker goes off and gets him killed.

During the NJO, Eelysa, trainer of Barabels (Eelysa begat Saba, Saba begat the hatchmates), a salt-addicted Arcona and several others. Her Jedi seem to act like Jedi, I think she really knew her stuff. I mean, she made excellent Jedi out of four members of one of the most savage races in the galaxy and a chain-sucking salt abuser.

Prequel Era: Obi-Wan, because from what I've seen of his master/padawan relationship with Anakin so far (Jedi Quest, Rogue Planet, the AoTC "Mystery" trailer, etc.), he just seems like the coolest master ever.

NJO: Jacen, because I think he'd make a great teacher. And because he's my favorite character in existence.
