As for Neimoidians, one of Jaina's wingmen in Destiny's Way is a Neimoidian. She ends up getting plasmed by a coralskipper.

 

I say other and I would love to see a Tuskins vs the Yuzzhen Vong.

There were some Dugs in Balance Point and Rebirth and a Toydarian in Rebirth.

How about Iktotchi or Cereans? Or some of the alien species involved in the Boonta Eva podraces?

Well Neimodians are decendants of Duros, and considering I believe as a race, Duros and Corellians (humans) are among the galaxy's best pilots, then it would make sense that there is at least one Neimodian that has his/her ancestor's gifts.
